We came home from a very hot and grueling camping trip and honestly the last thing I wanted to do was cook a dinner but we were famished so this is what I threw together and y’all it is too good not to share!
Easy One Pan Dinner Prep Time: 15 minutes Total Time: 1hr 15m Servings: 4 Ingredients: One dozen Baby Creamer Potatoes halved 2-3 cups fresh (snipped) or frozen green beans (I used fresh) 6 (2 lbs) boneless chicken thighs 1/3 cup diced tomatoes 1/4 cup chopped baby portabella mushrooms 1/2 cup olive oil - split 1 TBS Coconut Aminos 3 tsp garlic powder - split 3 tsp paprika - split Salt & pepper to liking Instructions: Preheat your oven to 350º. Line a baking sheet with edges with parchment paper. In a large bowl add your chicken, olive oil, coconut aminos, 1 tsp garlic powder, paprika and salt & pepper. Let it sit while you work on the rest of the ingredients. In a medium bowl mix your potatoes, olive oil, garlic powder, paprika and salt & pepper. In another medium bowl mix your green beans, mushrooms, diced tomatoes, garlic powder, salt & pepper. Spend the potatoes on one side, chicken in the middle and green beans on the other side. Cover with foil and place into the oven for 1 hour. When done (make sure your chicken is at least 165º internal) remove the foil and enjoy!
